50-70 grams butter (1 stick)
2 eggs
200 grams of sugar
300 grams of flour (regular self rising wheat flour)
2 tea spoons baking powder
2 tea spoons vanilla sugar
zest of half a lemon
0.4 cups milk
The cake can be eaten sliced as is or made into a layered cream cake, or slice it and turn it into pastries by covering slices with whipped cream or custard or jam or all of it :-) (that's a favourite of mine).
I can imagine it would be excellent in a trifle as well.
Preheat oven at 350F.
Grease a cake tin.
Melt butter and let cool.
Wet: Whisk eggs and sugar until light and airy.
Dry: Mix flour, baking powder and vanilla sugar and zest.
Pour the dry ingredients into the wet ingredients.
Add the melted butter and stir until smooth.
Poor batter into cake tin.
Bake in lower half of the oven for 40–50 mins at 350F.
